Mexican Vietnamese infusion is el-funko at El Loco. It’s Mexico City meets Hanoi. Tortillas meet lemongrass. Despite their oceans apart, the native fare from these two far-flung countries seem to work. The freshness of the Vietnamese coriander, mint and lime, lightens up and puts a spring back into what can sometimes be heavy Mexican dishes.
